Lettuce Boats

Ingredients:
  • 8 lettuce leaves
  • 1/2 cup black beans
  • 1 mango, peeled and diced
  • 1 avocado, peeled and diced
  • 1/2 yellow paprika
  • 1/2 tsp cumin
  • 1/4 tsp oregano
  • 1 tomato, diced
  • 1/4 cup diced red onion
  • 1/2 lime or lemon
Preparation:

Combine all ingredients in a bowl and mix well.
Add salt, pepper, cumin and oregano to taste.
Evenly spread mixed ingredients over the lettuce boats.
Squeeze the lime or lemon over your lettuce boats and season with sea salt, olive oil and hot sauce (if desired). Lettuce Boats are full of fiber and healthy fats. It’s very simple to throw together! Feel free to experiment with other types of beans or veggies.
